Ladies Finger Gojju

Ingredients
1 cup 1 inch long ladies finger pieces
3 tbsps oil for grinding gojju paste
4 tbsps oil for frying ladies finger pieces
2 tsps mustard seeds
2 tsps jeera / cumin seeds
1 tbsp dhaniya / coriander seeds
2 tbsps urad dhal
2 tbsps channa dhal
4 tbsps groundnuts
4 green chilles chopped
Lemon sized tamarind
Salt to taste

Method

  1. In a frying pan, heat 3 tbsps oil.
  2. Add urad dhal, channa dhal and groundnuts to the hot oil and fry till the dhal turn golden brown and groundnuts are roasted. Fry these on medium flame till done.
  3. Lower the flame and add cumin seeds, coriander seeds and green chillies and fry for 3 minutes.

  4. Turn off the gas and add the tamarind to the roasted ingredients and mix well.
  5. Transfer this contents to a mixer jar.

  6. Heat 4 tbsps oil in the frying pan and add the mustard seeds when the oil is hot. Add red chillies when the mustard seeds start to splutter.

  7. Add the ladies finger pieces, curry leaves, turmeric, asefotida and salt and fry till the ladies finger is thoroughly cooked.

  8. Grind the contents in the mixer jar to make a coarse powder.
  9. Add water and grind again till you form a smooth paste.

  10. Transfer this paste to a mixing bowl and add sufficient water to form gojju consistency.

  11. To this gojju, add the cooked ladies finger pieces along with the tempering and give it a nice stir.

Yummy ladies finger gojju is ready to eat. Serve this gojju with hot rice. It can also be eaten as an accompaniment with chapathis or phulkas.

Notes

  1. Do not reheat this gojju. It will spoil the gojju due to the stickiness from the groundnuts added. That is why you roast all ingredients initially and then grind them to a fine paste.
  2. Be cautious while adding water. If the gojju is too runny, it doesn't taste good.

Tips to speed up cooking the ladies finger gojju

  1. Wash the ladies finger and let them dry while you roast the mentioned ingredients for the paste.
  2. Cut the ladies finger while you are roasting the dhals and groundnuts. Ensure they do not get burnt or overdone.
  3. Cook the ladies finger when you set the roasted ingredients to cool. Do not grind the roasted ingredients when they are hot.
