Lemon Rice

Preparation time : 5 minutes
Cooking time : 20 minutes

Ingredients

2 cups cooked rice
1 big lemon
3 tbsps oil
1 medium sized onion finely chopped
3 green chilles slit and cut into halves
2 tsps mustard seeds
1 tbsp channa dhal
1 tbsp urad dhal
A handful of groundnuts
A few curry leaves
A pinch of turmeric
Corainder leaves for garnishing
Salt to taste

Method

  1. Spread cooked rice in a mixing bowl and set aside for cooling.
  2. Heat oil in a frying pan.
  3. Add mustard seeds.
  4. Once it splutters, add green chilles, channa dhal, urad dhal and groundnuts and fry.
  5. Once they turn golden, add the chopped onions and curry leaves and stir well.
  6. Add turmeric and salt to taste and mix well.

  7. Once the onions are cooked well, turn off the gas and transfer the contents of the frying pan to the cooked rice.
  8. Mix well.
  9. Now squeeze in the lemon and add chopped coriander.
  10. Mix thoroughly so that the lemon extract is evenly mixed with the rice.
Yummy lemon rice is ready to serve.
