Ingredients
2 cups cooked rice
1 big lemon
3 tbsps oil
1 medium sized onion finely chopped
3 green chilles slit and cut into halves
2 tsps mustard seeds
1 tbsp channa dhal
1 tbsp urad dhal
A handful of groundnuts
A few curry leaves
A pinch of turmeric
Corainder leaves for garnishing
Salt to taste
Method
- Spread cooked rice in a mixing bowl and set aside for cooling.
- Heat oil in a frying pan.
- Add mustard seeds.
- Once it splutters, add green chilles, channa dhal, urad dhal and groundnuts and fry.
- Once they turn golden, add the chopped onions and curry leaves and stir well.
- Add turmeric and salt to taste and mix well.
- Once the onions are cooked well, turn off the gas and transfer the contents of the frying pan to the cooked rice.
- Mix well.
- Now squeeze in the lemon and add chopped coriander.
- Mix thoroughly so that the lemon extract is evenly mixed with the rice.
Yummy lemon rice is ready to serve.
