Potato is an all time favorite for most of us. Try this yummy potato curry as an accompaniment with hot rice of phulkas.

Ingredients

medium sized potatoes peeled and diced
3
tbsps oil
1
tbsp urad dhal
1
tbsp cumin seeds / here's
1
tsp turmeric powder
3
tsps red chilli powder
1
tbsp dhaniya powder
A
handful curry leaves
Salt
to taste
Method
- Heat oil in a pan. Add jeera and allow to splutter.
- Add urad dhal and fry till golden
- Add diced potatoes and mix very well.
- Sprinkle very little water and close the lid. Allow to cook for 5 minutes.
- Remove the lid and now start stirring the potatoes continuously in high flame. This will roast the potatoes slightly.
- Reduce the flame and add curry leaves and stir.
- Now add turmeric powder, red chilli powder and dhaniya powder and stir well. Leave for two minutes in medium flame.
- Stir for a minute in high flame and turn off the gas.
Hot Potato Curry is ready to be served with jeera rice or curd rice. This curry is also good accompaniment to chapatis or phulkas.
Notes
- Soak the diced potatoes into water.
- Strain the water completely before using the potatoes in the curry.
