Ingredients
2 large carrots chopped into long chunks
Handful of french beans cut into medium sized pieces
1 medium sized potato peeled and chopped
1 cup fresh peas
3 tbsps oil
1 tbsp ghee
1 tbsp cumin seeds / jeera
2 cups raw rice
2 tbsps garam masala powder
Rock salt to taste
4 and half cups water
Ingredients for grinding
2 cups fresh pudina
Half a cup fresh coconut pieces
2 inch ginger chopped
6 green chillies
Method
- In a mixer grinder jar, add pudina, ginger, coconut pieces and green chillies.
- Grind to a fine paste by adding water as required.
- Heat oil and ghee in a pressure cooker. Add jeera when the oil is hot.
- Once the jeera crackles, add the ground paste.
- Stir well. After a few minutes, the paste comes together.
- Now add the chopped vegetables and mix well.
- Add raw rice and mix well. Let the rice roast with the ground paste and the vegetables for 2-3 minutes.
- Add enough water for the rice and vegetables to get cooked.
- Pressure cook for 2 whistles and turn off the flame. Allow the cooker to cool down.
Notes
- I like to prepare this dish as a one-pot-cooking. I feel this is more quick in terms of cooking and is also hassle free as compared to frying the ground paste in a pan and then transferring rice and the paste with other ingredients to an electric rice cooker.
- You may use basmathi rice for this recipe. Use the same quantity of basmathi rice. You can soak the basmathi rice 20 minutes before cooking and use it for this recipe.
- If you want to use garlic, add them to the mixer jar while grinding the paste.
